Ingredients:

  • 2 lg. Hass avocados, diced
  • 1 Lime, juiced
  • ½ Red onion, diced
  • 1 Jalapeño, or more if you prefer spice
  • 1 Garlic clove, minced
  • 1 handful Fresh cilantro
  • Salt and pepper, to taste

Instructions:

  1. Add all ingredients, except tortilla chips, to a food processor and pulse until desired consistency is reached.

Dig in to these frightfully delicious toasts … if you dare!

Spooky season is upon on us, so why not get in the spirit with a fun, creative treat the whole family can enjoy? These hauntingly good toast recipes are easy-peasy and don’t require many tricks, just treats! Plus, each one can be crafted with gluten-free and vegan-friendly ingredients. Thanks to our friend Elaine, at EatingbyElaine.comfor providing these fang-tastic bites.

Grilled Cheese Ghosts

Ingredients:

  • 2 slices Whole wheat or gluten-free bread
  • Vegan butter, for grilling
  • Shredded vegan mozzarella cheese
  • Black olives, for decor

  • How to:

  • Cut a ghost shape out of one slice of bread. Cut one side of the full slide and just one side of the slice with the cutout ghost in the center (the edges around the ghost). Save the cut-out ghost for the below recipe.
  • For the full slice of bread with no cutout, place butter-side down on skillet over medium heat. Do the same with the slice of bread with the ghost cutout in the middle. You will end up putting these two slices together in a moment.
  • Spread mozzarella cheese overtop only the full slice of bread in one even layer as the other side of the slice sears.
  •   
  • Place the leftover bread (with the ghost cutout in the middle) overtop the full slice of bread with no cutout.  Make sure the butter side/seared side is facing up. Allow the grilled cheese ghost sandwich to continue to cook another minute or two to allow the cheese to melt into the top slice and help hold the sandwich together.  Take the grilled cheese off the burner and decorate with black olive slices to make a ghost face if desired.

  • For the actual ghost cutout, you can save this for the recipe below.  Or, you can spread the mozzarella cheese over top of the ghost cut out too.  You can place this piece in a toaster oven at 400°F to cook it and melt the cheese until golden brown.Then decorate it with black olives for the ghost face too.

Ghost Toast

Ingredients:

  • 2 slices Whole wheat or gluten-free bread
  • Vegan cream cheese
  • Raisins and chocolate chips, for decor

  • How to:

  • Toast the bread.
  • Cut a ghost shape out of one slice of bread only.
  • Spread cream cheese overtop the ghost and the other slice of bread.
  • Place the slice of bread with the ghost cutout overtop the slice of bread with no cutout.
  • Decorate both ghosts with raisins for the ghost mouth and chocolate chips for the ghost eyes.
Vegan ghost toast

Sweet Spider Web Toast

Ingredients:

  • 1 slice Whole wheat or gluten-free bread
  • 2 Tbsp. Nutella or hazelnut spread
  • 2 Tbsp. Vanilla fruit dip or vegan icing
  • 1 Medjool date, pitted
  • 2-3 Pretzel twists

  • How to:

  • Lightly toast one piece of bread.
  • Spread 2 tablespoons of Nutella or hazelnut spread overtop to cover the toast entirely.
  • Use a fork or squeeze bottle with a fine tip to make the spider web design out of the cashew icing.
  • Halve the date lengthwise for the spider’s body and place it on the web.
  • Break the pretzel twists to create tiny spider legs and add 6 pieces (3 on each side of the date). Enjoy!
Nutella spider toast

Pumpkin & Fall Leaf Toast

Ingredients:

  • 4 slices Whole wheat or gluten-free bread
  • Pumpkin flavored hummus, or hummus of choice
  • Reed, yellow and orange bell peppers, sliced into 1-inch pieces

  • How to:

  • Use a pumpkin shaped cookie cutter to cut a pumpkin image out of one slice of bread.
  • Spread hummus over top the other slice and place the bread with the pumpkin cutout hole overtop. This way you don’t waste any bread.
  • For the pumpkin that was cut out, spread pumpkin hummus overtop. Use a tiny piece of the bread’s crust for the stem.
  • For the leaves, lightly toast 2 slices of bread.
  • Use a knife to cut leaves out of one slice of bread.
  • Spread hummus over top the other slice and place the bread with the leaf cutout holes overtop. This way you don’t waste any bread. Decorate with sliced bell pepper.

  • How to:

  • Fill a glass with ice.
  • Add lemonade, then stir in the Black Elderberry Syrup. Add sparkling water.

Black Elderberry Tonic Iced Tea

Ingredients:

  • Ice
  • 1 cup Green tea, brewed according to package directions and cooled
  • 1 tsp. Gaia Herbs Black Elderberry Tonic
  • Sparkling water (optional)
  • A few small sprigs of fresh herbs, such as basil or lemon balm
  • 1 Lemon wedge, for garnish

  • How to:

  • Pour cooled green tea over ice, then add Black Elderberry Tonic. Stir gently. Add sparkling water, if using.
  • Lightly rub herbs between hands until they are fragrant and slightly crushed, then add to the glass and stir gently to incorporate.
  • Add lemon wheel or wedge to the side of the glass or squeeze slightly and add directly to the beverage for more delightful lemon flavor.
Black Elderberry Tonic Ice Tea Mocktail

Black Elderberry Tonic Vinaigrette

Ingredients:

  • 1/4 cup Olive oil
  • 2 Tbsp. Gaia Herbs Black Elderberry Tonic
  • 2 tsp. Fresh lemon juice and zest
  • 1 tsp. Mayonnaise (optional)
  • 1/2 sm. Garlic clove, minced or chopped very fine (optional)
  • Salt and pepper

  • How to:

  • Add olive oil, Black Elderberry Tonic, lemon juice, and mayonnaise (if using) to a small bowl or jar with a tight-fitting lid. Whisk if using a bowl or shake vigorously if using a jar, until ingredients come together and emulsify
  • Add lemon zest, garlic (if using), and salt and pepper to taste (at least a big pinch of salt and a few grinds of black pepper but adjust according to preference). Whisk or shake again to incorporate ingredients.
Black Elderberry Tonic Vinaigrette

Black Elderberry Tonic Roasted Strawberries

Ingredients:

  • 1 lb. Strawberries, washed and hulled
  • 3 tsp. Gaia Herbs Black Elderberry Tonic
  • 1/2 tsp. Vanilla extract
  • 1 pinch Salt

  • How to:

  • Preheat the oven to 350⁰F.
  • Put the strawberries into a baking dish. Sprinkle the Black Elderberry Tonic, vanilla, and pinch of salt over the strawberries and stir, making sure all berries are covered. Allow to soften/macerate for 30 minutes, stirring occasionally.
  • After the strawberries have macerated, arrange them in a single layer in the baking dish and roast in the preheated oven for 20 minutes (15 minutes if using a convection oven).
  • Remove strawberries from the oven and allow to cool before serving. You can store leftovers in the refrigerator in an airtight container for a few days.
  • Serve over ice cream, oatmeal, toast with nut butter, yogurt, granola, pancakes, French toast, grilled fish, tofu, or used as a cake topping.
