Roasted Autumn Vegetables
Ingredients
2 organic Yukon Gold Potatoes cut into 1 inch chunks
1 organic rutabaga, peeled and cut into 1 inch chunks
2 organic turnips peeled and cut into 1 inch chunks
3 organic parsnips peeled and cut into 1 inch chunks
1 organic large purple onion, peeled and cut into 1 inch wedges
2 organic beets (garnet or golden) peeled and sliced into 1 inch slices
6 whole cloves of garlic, peeled
1/2 cup of Olive Oil
4 to 5 sprigs of fresh thyme
2 tsp. coarse sea salt
Freshly cracked pepper
Instructions
Prep Time: 60 minutes, Serves 6
Pre-heat oven to 375 degrees F. Place all vegetables, garlic and fresh thyme in a large mixing bowl. Toss with olive oil until well-coated and spread out on a large cookie sheet. Sprinkle with salt, cracked pepper. Bake for about 45 to 50 minutes, stirring occasionally.
