Ingredients

2 teaspoons olive oil

1 medium yellow onion, finely chopped (about 1 cup)

1 cup chopped carrot

1/2 cup chopped celery

1/4 cup chopped mushrooms

2 cloves garlic, minced

1/8 teaspoon dried thyme

2 egg whites

1 cup fresh bread crumbs

1/2 cup reduced-sodium ketchup

1/4 teapspoon salt

1 pound ground turkey

8 ounces lean ground beef
Directions

Preheat oven to 375' F. Spray an 8-x 14-inch loaf pan with vegetable cooking spray. Set aside.

In a large nonstick skillet, heat oil over medium-high heat. Add vegetables, garlic, and thyme. Cook, stirring, until vegetables begin to soften, about 5 minutes. Transfer to a plate; cool slightly.

In a large bowl, combine the egg whites, bread crumbs, ketchup, and salt. Add turkey and beef; mix just until blended. Add vegetable mixture; mix well. Press into prepared pan.

Bake until a metal skewer inserted in center feels warm, about 55 minutes. Let stand for 10 minutes. Cut into slices and serve.
